Salsa with a Peachy Twist
Peaches are the quintessential summer fruit and you will find them aplenty at farm stands and markets in Frederick during the months of July and August. Yellow peaches offer an aromatic flavor of evenly balanced sweet and acidic flavor. In addition to being juicy and delicious, yellow peaches pack a vital punch of nutrients including Vitamin K and Vitamin E.
This recipe offers a pleasing twist on traditional salsa. Yellow peaches offer a luscious taste and pop of color. Peach salsa is great side dish that pairs well with chips, grilled chicken or salads. The featured peach salsa here was prepared incorporating fresh local produce. Peaches grown by Scenic View Orchards. The onion and jalapeno were bought at the Field Fresh Farmers Market, and heirloom tomatoes were part of a CSA share from House in the Woods Farm.

Ingredients:
3 medium heirloom tomatoes, diced
1 small red bell pepper, diced
2 jalapenos, seeded and finely diced
1 red onion, diced
3 yellow peaches, diced
1 cup cilantro, chopped
2 Tbsp lime juice
1 tsp coarse salt
Directions:
Chop the tomatoes and place in a large bowl.
Thinly dice jalapenos, onion, and bell pepper. Add to bowl with the tomatoes.
Slice the peaches. Peaches can be a bit larger than onions and peppers.
Toss peaches with tomatoes, onions, and peppers so they are combined.
Add lime juice and salt. Stir to combine. Salt can be adjusted to taste.
Place in fridge to chill for at least one hour.
