The Sweetest Salad of Summer
No summer can be complete without the refreshing sweet taste of watermelon! This delicious fruit has been known to offer a plethora of health benefits. It is paced with antioxidants plus Vitamins A and C. Watermelon salad combines the sweet fruit with fragrant basil and mint complimented by a vinaigrette. This salad is sure to be a hit at your end of season gatherings!
Prep Time: 20 minutes
Ingredients:
1 small watermelon cut into cubes. If using a large watermelon use half.
1 half of a red onion, diced
1/4 cup basil, chopped
1 large spring of mint leaves, chopped
Dressing:
1 Tbsp fresh lime juice
1 Tbsp honey
2 Tbsp olive oil
1 Tbsp champagne or balsamic vinegar
1 Tsp Salt
Directions:
Combine watermelon, red onion, basil, and mint in a large bowl.
In a small bowl whisk together all ingredients for the dressing.
Pour the dressing over the salad and toss or stir to combine.
Place in refrigerator to chill one hour or more.
Before serving stir in feta cheese. Add salt and pepper to taste.
After refrigeration some of the liquid can be removed to make the salad a bit less water. Honey can be adjusted to desired level of sweetness.
